Updated Recipe – EASY CHICKEN POT PIE

I’ve been making this easy chicken pot pie recipe for YEARS and have tweaked it, over time, as our family has grown! Bigger batches needed. haha.
Here’s an updated recipe on my family’s favorite comfort food meal. This is the perfect weeknight dinner…when you’re craving that home cooked savory meal but need it to be EASY..this is the recipe for you!

You can’t go wrong with my past recipe shares for this, but I will say this is how I currently make it and it comes together faster than ever.
My family prefers baked chicken over boiled these days. I also skip the onions and add more milk to stretch it. (6 hungry kids in the house now!) This is a great recipe to feed a crowd.

INGREDIENTS:
5-6 Baked Chicken Thighs
1 bag frozen veggies
1-2 cans of biscuits. (we always have leftovers when we make 2)
1 stick butter
2/3 cup flour
5 cups milk
1 1/2 cups chicken brother
Salt and Pepper to Taste

STEP BY STEP:
First things first you’re going to want to prep your chicken. I like to do this earlier in the day before it’s time to make dinner- but plenty of times I just prep it right before and as soon as it’s out of the oven I start the rest of the recipe! We prefer dark meat in this recipe but it’s really whatever you like. Just bake and shred/slice up, and set aside.

Time to make the magic! You’re going to melt 1 stick of butter in your pan.
Now is a good time to pop your biscuits into the oven – trust me the recipe comes together fast!
Then add your 2/3 cup flour. Whisk it together and let it simmer for a bit to get the flour taste out.
Then pour in your 5 cups milk. (I add this in gradually, as it thickens..don’t pour in all at once.)
Start with adding 1 cup chicken broth, adding another 1/2 cup later when you add the chicken, stir as it thickens.
Pop your frozen veggies in microwave.
Add your shredded chicken into the mixture…. and then your veggies.
(add remaining milk and brother if you haven’t used the full amount just yet listed. I usually eyeball it as I go to get the thickness we like.)
Salt and Pepper to taste.
We like to dice up our biscuits and pour the easy chicken pot pie mixture over the top!

This is such an easy recipe! You will end up not even measuring, like I do! I’m a fan of dinners that take just a few basic ingredients.
