I shared on instagram yesterday how we are starting Operation Eat Out LESS.
Sundays is usually a day that we go out to eat after Church.
But today I set myself up for success and had a plan, all the ingredients and put making something at the top of my to do list.

Lunch is always a hard meal for me to prepare. I don’t like lunch meat and
I can only eat so many pbj’s and grilled cheese sandwhiches!
It’s usually that or leftovers. So part of our new plan is to come up with some yummy options for lunch!
Today for lunch I made a lighter version of a pasta carbonara…
Pancetta + Peas Parmesan Pasta! (all the p’s please.)
Instead of a heavy sauce I just did parmesan and a little butter.
The kids gobble this up and actually eat the peas!
Micah had to be “talked” into eating them. “Hulk Smash lovessssss peassss”
INGREDIENTS:
Pasta (I used Ziti)
Bag of Frozen Peas (I get the kind you can steam in the microwave)
Cubed Pancetta. (This is a treat.)
Butter
Salt + Pepper
Grated Parmesan Cheese (Or shaved)
Garlic
STEPS:
+Put water on to boil.
+Dice up some garlic. I did one clove.
+In a small pan cook up the cubed pancetta a long with some diced garlic.
(If you don’t have fresh just sprinkle some garlic powder in later on!)
+Put bag of peas in microwave to steam.
+Once pasta is done to your liking, drain and return to pan.
+Add 3 TB butter and as much parmesan as you like!
+Add salt and pepper (go easy on salt because the pancetta is pretty salty..test it as you go!)
+Add the Peas and Pancetta
+Stir it up and enjoy!
I love the simplicity of this recipe.
The sweet peas and salty pancetta are the perfect combo!
This recipe gives us two meals. I might even end up giving a small bowl of this to
the girls as soon as they get home from school tomorrow.
Because if I don’t feed them right when they get home from
school… their world crumbles from exhaustion and hunger.
You don’t want to be in their path.

January 10, 2016 at 9:11 pmWe grew up eating Mac and Cheese with tuna fish and peas added to it. My mom grew up eating it too. Must be a PA thing. This looks yummy!

January 10, 2016 at 10:44 pmOur kids love this meal too. I usually sub the pancetta for the Aidelle’s chicken apple sausage I pick up at TJs or Costco. They think they’re having hot dogs, so win-win for everyone!
