It might not be Fall weather here in the Carolinas… but we are ready for Fall comfort food!
I have been making this Chili recipe for years- a family favorite!
We enjoy this all fall long but we specifically make it every year on Halloween…
It’s become a family tradition! Aperfect classic recipe that everyone always raves over!
Add hot sauce if you want to spice it up – but this is a great kid friendly Chili recipe.
We always pair it with cornbread. Our go to is the jiffy recipe!
There is something so comfy about a big ol’ bowl of chili with cheese,
a scoop of sour cream and some buttered cornbread on the side!
This recipe works for a weeknight meal with an hour prep time…
or a weekend dinner where you can let it simmer on low longer. It’ll taste even better!
But I love that this works either way.
INGREDIENTS:
1 Cup diced Onions
5 Cups Ground Beef
3 Cans Light Red Kidney Beans
2 Cans Diced Tomatoes
15oz can of Corn
2 Cans Water
3 tsp Garlic Powder
3 tsp Cumin
3 tips Chili Powder
3 tsp Salt
1 Spoon Sour Cream
1 Spoon Tomato Paste
4 TB Butter.
2 boxes of Jiffy Cornbread
Toppings:
Sour Cream
Shredded Cheddar Cheese
DIRECTIONS:
In a large pan brown your ground beef.
(I got 3 pounds, browned it all up but only used 5 cups of it- Using the other for tacos!)
In your chili pan put 4 TB butter and your diced onions.
Add in your seasoning and stir all together – Chili Powder, Garlic Powder, Cumin and salt.
Add your cans of tomatoes, kidney bean and corn.
Use one of your cans to add 2 cans of water. (You could also use beef broth but this is just how
I’ve made it over the years since I never had beef broth around haha.)
Add one spoon of tomato paste and sour cream.
Add in your 5 cups of ground beef.
Cook on medium high heat for an 30-45 minutes…
OR cook on medium heat if you have more time!
The longer you cook it the more blended and delicious it is…..but we usually can’t wait too long to dive in!
Serve with sour cream and shredded cheddar cheese!
We love cornbread with our chili and our fave is the jiffy recipe!
Asher likes to help me pick out cupcake wrappers for them.
I didn’t really fill these up high enough but they still tasted good!
When we take them out I rub a stick of butter on the tops while they’re still warm…just for good measure. ;)
On Halloween you can have fun with this and use a fun spooky themed cupcake wrapper!
