This Carrot Cake recipe has been our go-to since my childhood!
It’s a family tradition now that we all absolutely love.
If you’ve been on the hunt for the perfect carrot cake recipe, this is it!
My sweet Sophia made this cake for us and I was SO impressed with her piping skills.
I love seeing her follow her passion for baking.
She’s learning and trying new things and
I’m happily taste testing a long the way. ;)
Sharing today the full carrot cake and cream cheese frosting recipe. Enjoy!
CARROT CAKE INGREDIENTS:
1 1/2 Vegetable Oil
2 Cups Sugar
4 Eggs
2 Cup Flour
2 tsp Soda
1 tsp Salt
3 tsp Cinnamon
2 tso Vanilla
3 Cups Grated Carrots
CAKE CAKE DIRECTIONS:
Preheat Oven to 325 Degrees.
Combine oil, sugar and eggs.
Sift dry ingredients and add to wet ingredients. Mix well.
Mix in vanilla and carrots.
Bake in well greased pans.
(We typically make this in an 8″ square pan)
Bake in 325 degree oven for 45 minutes.
Cool and frost with cream cheese frosting.
CREAM CHEESE FROSTING INGREDIENTS:
1 stick butter or margarine
1 pkg (8 ounce) cream cheese
1 pkg confectioners sugar
2 tsp vanilla
CREAM CHEESE FROSTING DIRECTIONS:
Soften butter and cream cheese – beat together.
Add sugar and vanilla and beat until spreading consistency.
If you are wanting to add the carrot decorations, scoop a portion
of the frosting in a bowl for green and a bowl for orange.
Color with food coloring and set aside.
Frost between layers, sides and top of carrot cake.
Let the frosting set up a little and then pipe on the carrots!
(Sophia is using a piping tool that was her grandma’s!)
For this recipe Sophia wanted a round cake so we had some
leftover batter and made a dozen cupcakes too!
The cupcakes are a great size for the littles…
And the carrot on top made them so cute!
Asher gave the carrot cake cupcakes two thumbs(pointer fingers) up!
I am so impressed with this girl right here!
She made this carrot cake and it means way more than you realize.
I knew that the move was going to be harder on her with so much change
and unknowns, so I wanted to give her something special to pour into.
I’ve been giving her extra time and attention in the kitchen as she follows her passion of baking.
(Its HARD to let your 9 year old take over lol but it’s so important to let them try things.)
I would say Sophie is my worrier and is just more anxious about things.
Right before she was about to pipe the carrots on I saw the nervousness build…
there were almost tears at the thought of messing up.
But I reminded her that she could do this.
That even if it didn’t turn out exactly like she thought… it was still going to be amazing.
And then I realized I was giving myself my own life pep talk via frosting carrots. Lol.
She rocked it— and that is the smile of a proud girl. We are doing an insta account
