Sophia loves bananas..but sometimes we don’t eat them fast enough.and they go into the freezer. We ended up with so many bananas in the freezer!! So late last night at 11:00pm as my husband and i were catching up on our tivo’d heroe’s episode..i decided to make some banana bread! Muffins sounded quicker..haha. so i ended up making one pan of muffins and then a small loaf. mmm they hit the spot. and sophia ate one for breakfast! They really didn’t take too long to make and were sooo moist. try them out and use up those bananas you have hidden all over your freezer! the browner the better!
Ingredients:
1/4 cup butter (i only had margarine)
1 1/3 cups sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt
1 1/2 cups very ripe bananas (skins should be very dark)
1/2 cup chopped walnuts (optional. for sophia i didn’t put them in)
1 cup sour cream (or you can use equal parts lemon juice and milk)
Directions
-Preheat oven to 350*
-Cream butter and sugar till light and fluffy
-Add eggs and vanilla
-Beat Well
-Sift dry ingredients.
-A little trick my mom taught me for frozen bananas:
Pop them in the microwave to defrost them. you want them to be soft and a little warm.
-take scissors and cut off the end…and squeeze the banana right out! wala!
it’s kinda gross feeling..haha. but works.
-Add dry ingredients, banana’s and sourcream alternately. Mix Well. Add nuts if you want.
-If you are making a loaf bake in the oven for 45 minutes.
If you are making muffins bake for 30 minutes.
-You want the tops to be golden brown and a toothpick to come out basically clean.
mmmmmmmm..our house smelled so good.
And the husband approved. :)
