Skillet Hash browns + Eggs

Our family could eat breakfast foods for any meal! I love this cheesy potato and egg dish because it is delicious and SO EASY to make!
It’s a recipe that you can easily adjust to feed the amount of people at your table. Have a few more kids? Drop in some more eggs!
If you’re in the mood for hash browns with onions and peppers, but would love a shortcut to make it come together quicker, I GOT YOU.

The other day at Target I grabbed a bag of these frozen Ore-Ida potatoes. (I do not suggest shopping hungry haha.) They looked yummy and the perfect ingredient for this busy mama. Just add some eggs, cheese and seasoning and you are all set with the perfect EASY Skillet Hash browns and Eggs!

INGREDIENTS:
Ore-Ida Potatoes O’Brien (or any frozen potatoes/hashbrown mix you like!)
Eggs
Shredded Cheese. (I prefer cheddar but pick your favorite cheese.)
Canola Oil
Salt + Pepper + Parsley

DIRECTIONS:
1. In a large skillet prepare your frozen potatoes as directed.
2. Make wells for your eggs in the potatoes mixture and break one egg into each well.
3.Cover and cook on low heat for 8-10 minutes or until eggs are set.
4.Season with salt.
5.Sprinkle with shredded cheese and parsley!

If you’re looking for a yummy recipe for your family, this is a great one! It can easily feed a crowd, based on how much you put in the one pan, and I’m all for a little shortcut with the frozen potatoes! I really love this mixture with the peppers and onions. Of course you can make this up with fresh potatoes and peppers. I’ll just take any help I can get in this season. ;)

I know I’m always looking for something, that I hadn’t thought of before, to spice up my meals! I was getting in a pasta or chicken rut. I made this for lunch when there was only a few of us to feed and it was the perfect salty and cheesy comfort food! How do you like your eggs? You can cover and cook this longer if you like them harder- but I like to have the yolks run a little into the potatoes. So good!
