Today I’m sharing an Enchiladas Hack to feed a crowd in a hurry by using the The El Monterey® Burritos to cut out the prep time! This recipe was a HIT with my kids. And any meal time where I don’t have to tell the little kids how many more bites to eat…is a win for me! If you are craving a yummy enchilada dinner, but need it to come together quick, you are going to love this post! Let’s dive right into the Beef & Bean Enchiladas recipe!
My kids prefer the white cream sauce on their enchiladas so for today’s recipe I made that type of sauce to top off the Beef & Bean Burritos. (You could easily do a red sauce if you prefer that type of enchiladas.) You will be amazed at how fast this comes together and tastes like you’ve been spending a ton of time preparing this home cooked meal. (Your secret it safe with me!!)
Preheat your oven to 350 degrees.
I like to get the large bags of El Monterey® Burritos. The burritos aren’t packaged individually so you can quickly line your baking pan with them.
Time to melt some goodness together for your white cream sauce!
In your pan combine 1 cup of Shredded Colby Jack Cheese, 1 Cup of Sour Cream and a splash of heavy cream. Stir on Medium low heat till fully melted. Pour your melted cheese sauce over the Beef & Bean Burritos, sprinkle a little more of the shredded cheese on top, a dash of pepper… and pop it in the oven, uncovered!
Bake for 28 minutes or until all melty and toasty looking! Your house will smell delicious!
While it was baking I cut up some lettuce for the side. My kids and I like having lettuce with our enchiladas. The kids LOVED this recipe! It’s burritos… undercover as enchiladas!! It was that perfect comfort food we were wanting for dinner!

However, since moving to the UK, there’s nothing like El Monterey here :-(. But I’ll bet this recipe tastes wonderful! Thanks for sharing!

September 24, 2020 at 4:42 pmOh my gosh! I just did this like 2 nights ago before you posted this. I used a can of red enchilada sauce and topped with Colby jack cheese and put in the oven at 350 for 40 minutes. It’s an excellent hack and even my husband said they didn’t taste like frozen burritos.
